NU FS 481 - Advanced Foods ★ 3 (fi 6) (second term, 3-0-0) Critical evaluation of current literature on the effects of ingredients and processing on quality characteristics of foods. Graduate students may not register for credit (see AFNS 581). Credit will only be given for one of AFNS 581 and NU FS 481. Prerequisites: NU FS 374 and *3 Biochemistry or consent of instructor.
